The Smooth chanterelle (Cantharellus lateritius) is a recognizable member of a group of popularly edible mushrooms commonly referred to as Chanterelles. Chanterelle mushrooms lack true gills, the distinct papery structures on the underside of a mushroom’s cap that contain the spores. But, many species have deeply furrowed, folded ridges that imitate the structure of gills closely. The Smooth Chanterelle is distinguished by its lack of defined gill-like structures – the underside of the mushroom cap is namesake smooth, or very shallowly wrinkled. These mushrooms are bright yellow to orange, often described as egg-yolky in color, and have a fruity apricot scent. They typically grow solitarily or in small patches at the base of oak or hickory trees, who are their choice partners in mycorrhizal collaboration.
